French Fridays with Dorie ~ Salmon Rillettes |
Here we are, it’s French Friday again! Our recipe this week is for the third and last rillette, from Around My French Table. Inadvertently saving the best for last! Honestly, I never made the sardine version. I just don’t do sardines! Although, we really enjoyed the tuna version, this was the best in my book! Rilettes are usually a meat spread that is similar to pâté. They are usually made of pork or goose meat. Lucky for us, Dorie has shared two delectable fish versions! I can’t recommend the sardine version, even though it got many wonderful reviews from other members.

When finished, it is packed in a serving dish or crock, and left to chill for several hours, giving it a chance for the flavors to meld.
I served this scrumptious Rillette with rustic bread slices and crackers! For us, it was a winner! I plan to make it again, for our 4th of July get together! Fish is always a winner with my Dutch husband, and this dish was no exception! He did think I added too much lemon juice although he kept eating it and seemed to enjoy every bite! An elegant starter for an ordinary evening!

My last week was spent in Cooperstown, N.Y., watching my grandson play baseball at Dreams Park. His coach…my son! The team played hard and gave their all. So proud of you Hurricanes! It was an exceptional experience! Happy Friday everyone!!

ReplyDeleteThis was also my favorite of the three rillettes, Kathy. It was the fishiest tasting, strong flavoring, but I liked the mixture. Plus, I thought it was quite special and will certainly serve it at dinner parties and gatherings. I also felt guilty making it into a sandwich for my hiking lunch last week - a little lah-de-dah for eating while sitting on a log, I must admit. I have enjoyed all your pictures from Cooperstown. My Dad and brother were both major leaguers so we've always been a baseball family. My brother also coached his sons in Little League and we all loved watching it. Wonderful memories, huh?

ReplyDeleteYour Salmon Rillettes looks absolutely amazing - wasn´t this a wonderful recipe - I am certainly glad that we are not the only ones raving about this. I agree that this was a delightfully easy recipe and just wonderful on those thin slices of fresh baguette. As far as the Pipéarde is concerned - well, I do not do peppers, so I did not make that dish but I must say that your peppers in the bowl look fabulous and so colorful!

My husband is from Miami as long as he gets fish and fruit he's happy. I think he may have enjoyed this one a little more than me. Seasoning was the issue, not the salmon. I have to get my kids up to Cooperstown. We went when they were little to see a Winslow Homer exhibit.. there are great museums there. I loved the Native American one... but we need to do the hall of fame.

And I imagine that any respectable Frenchwoman (or man) would use the piment d'Esplette instead of standard chile flakes or powder! Oh, and I love going to Cooperstown - the Baseball Hall of Fame and the Glimmerglass Opera are two of my favorite things on earth - both in Cooperstown! ~ David

ReplyDeleteI know I should really be excited about that Salmon Rillette (I'm sure it's scrumptious:) however, I can't helping smiling at the thought of your son AND grandson going to Cooperstown! Go Hurricanes!!! I went to all of my grandson's games while visiting my daughter and oh gosh, was it wonderful! You must be so proud and excited for your "team."

ReplyDeleteWe sometimes go to Cooperstown when we have a lazy weekend day with nothing scheduled (its only an hour or so from us) - aside from the baseball hall of fame, there are a couple of other nice museums and you can't beat lunch out on the patio at the Otesaga :-)
Cher, It was a wonderful few days! You are absolutely right about lunch at the Otesaga! What a gorgeous place!! We actually ate there 3 times…it reminded me of the movie “Somewhere In Time”! I love old historic places like that. The grounds are amazing…I could have spent my whole day sitting on one of those benches, looking out onto the lake!
