How lucky can I be. Our pick was for Muenster Soufflés. Soufflés are relatively easy to make and, you don’t need a lot of fancy ingredients. They consist of eggs, milk, cheese, flour and butter. First, making a roux with the flour and butter, then adding the milk to make a basic béchamel sauce. I couldn’t find the french munster, that the recipe calls for, but I did find it online. I decided to order it, even though I used the cheese I had on hand (cheddar) for this post. When my french muenster cheese arrives, I will be trying these again. These were wonderfully delicious and, my husband and I enjoyed them very much. They puffed up beautifully, and as with all soufflés, deflate almost instantly. It was hard to get photos when they were puffed…oh the worries of a food blogger! I will be making these again, easy, impressive and heavenly tasting! You really have to give these a try. Oh my you are brave, Kathy:) I would never attempt to make a Soufflé and take a picture of it to boot! Yours looks lovely though. How exciting to find the French cheese online.

I was sad to miss Dorie's birthday. I had ingredients to make an apple cake, but then just got home way too late to do much more than fall into bed.

ReplyDeleteYou really nailed it with the Madeleines and then these amazing soufflés....all while just arriving home. WOW !!! Yes, your priorities are spot on in my book :) I adored these but the way I adored them would probably not have fared well for Bill (I slathered them onto bread while drinking hard cider.....). They reminded me of how much I enjoy a soufflé and I plan to make more shortly. Kathy your photos are really outstanding. Granted I have always adored that copper heart tray of yours but regardless- these photos are really awesome. GREAT JOB all around and welcome home.

ReplyDeleteI'm embarrassed to say that I haven't made a cheese soufflé since the 70s. I'm not sure why because it tasted so darn good. It was a recipe I got from Bon Appetit and I loved it. I then went out and purchased a book on soufflés and quiches and used it to death making quiche. I think I avoided making soufflés because if not eaten right away they would fall.
