Anne Lablanc’s Pistachio Avocado…delicious!

When I looked at this weeks French Friday recipe, the word easy came to mind!  Four ingredients was all that was called for. We’ve had a string of easy recipes lately.  I’m not complaining, since my life has been quite hectic this spring. Easy works for me! After spending a week down south, and returning home late wednesday night, I was delighted not to have anything too complicated to delve into.  Expensive also came to mind. The recipe called for Pistachio oil, which I found on the internet, and not in my local supermarket. It was quite expensive at about 16 dollars for an 8 oz. bottle. However, I was short on time.  So, I decided to look for a recipe and make my own.  I found one at Food and Wine.  It seemed perfect except, it had to infuse overnight.  There was no way I had time to wait for the oil to infuse.  Then I searched my pantry. Oh, the surprises that I seem to find hiding there.  I found a can of pistachio paste.  I’ve used this product before, and know there is usually an oil sitting on top of the paste. How lucky was I?  It worked perfectly! Now that I have an open can of Pistachio paste sitting on my counter, I see some Pistachio Gelato in my future…yum!


For this recipe, cut each avocado in half and remove the pit. Then take a thin slice off the bottom skin of each half of avocado, so that they will stand. I peeled mine.  Drizzle with fresh lemon juice, so that you have about 1/8 of a teaspoon in the bottom of each piece of avocado.  Fill each cavity to the top with the pistachio oil and, sprinkle with sea salt. Serve extra lemon on the side.  That’s it! I told you it was easy!  I loved these! I will definitely make them again…they were so good! I see serving them as a starter for a dinner party. I ate mine for lunch, and totally enjoyed the rich nutty flavor imparted by the pistachio oil. I think I’ll make a bottle of the pistachio oil, just to have it on hand for the next time I have an avocado in the house!

  2. I´m in love with this combination, and also with homemade pistachio oil! Though pistachio paste sounds so great for so many things. Ice cream is a fabulous idea Kathy!

  3. I loved this recipe, too! I want to try making pistachio oil sometime. At the rate I'm going, it won't be long before I finish the can of pistachio oil I bought at the grocery.

  5. pistachio paste do you bake with it like almond paste? sounds delicious and I bet made a better oil than the ground nuts.

  7. I needed hazelnut oil recently which I (finally) found locally--pistachio sounds even harder; what a lucky find on top of your paste! This sounds delicious!

  11. Oh gosh Kathy! I have 2 cans of that paste in my pantry that I have been saving to make gelato with! I didn't even think I could have siphoned off some oil there! I ended up having no trouble buying the oil and I was very happy with it. I'll certainly be using it all summer long and I have already used it in some salad dressings that are just fantastic with this oil. That said, I love the idea of making it ourselves and will definitely do that when I run out.

  16. Hi Kathy, lovely to meet you via The Kitchen Lioness. I asked Andrea about a possible substitute for the pistachio oil and she suggested a good olive oil or walnut oil but I see you were thinking on your feet and have found a very creative solution. Delcious!

    p.s. I'll be looking out for that gelato too!

  17. Looks great, Kathy! I made my own, which tastes great. But, now that you tell me you saw some at Home Goods, I'll look next time I go. I have the same treasure trove in my pantry. I'll bet a lot of the Doristas do too. That's why we all have so much fun sharing with each other!

  19. I had actually never heard of "pistachio paste" so this was a very fun post for me to read. Evidently I need to start making some gelato and I would know these things :) Yours looks just divine- the color of that oil was deeper than the homemade version I concocted and I can just imagine the depth of flavor you got. I definitely need to go shopping .......

  20. It really is so fun to come across recipes that I absolutely have never heard of before. Never heard of pistachio oil...but why not? We have oils of every other nut. In fact, never heard of pistachio paste! So funny, how you economized and improvised from your pantry!

  21. Do you remember when Betsy went to her basement and, just out of the blue, found a spaetzle maker? Your Post reminded me of that. Now, Kathy, who has pistachio paste hanging around. I have never even heard of pistachio paste. I usually have a bag of shelled pistachios in my freezer because my granddaughter loves them but my cupboard is bare right now. I used Meyer Lemon olive oil which I thought was cool until I read everyone else's Posts. Your simple little plate of beautiful avocados looks mighty tasty.
