FFWD~Corn Pancakes

Delicious Corn Pancakes
This has been a crazy week for me! With all the things I had to do, I pulled my neck while moving planters on my deck!  I have been fully functional most of the time but, the heating pad has become my new best friend! So, I was quite happy when I saw this weeks recipe for French Fridays! I’m thinking, one of the easiest we have made yet! 
Dorie tells us, she fell in love with these corn pancakes while visiting a French country inn years ago!  Years later, while out to dinner in the states, she saw them again prepared by now famous French chef Jean-Georges. When she commented on how she loved them, he told her with a shrug, “They’re something my mother made all the time”.
The batter for these little gems was very simple. It uses canned corn.  Can’t get easier than that!  I don’t  use a lot of canned veggies with the exception of canned corn, canned chick peas, cannellini and black beans (oops.. I guess I do use them ). These are staples for many dishes I make such as hummus!   No shopping or expensive ingredients for this recipe! I used my food processor and mixed everything in the bowl…can of corn, flour, eggs and salt.  Give it a whirl, and the batter is ready for the fry pan.  Drop tablespoons of batter into hot oiled pan and cook!  Very easy!!
I served mine with some beautiful lamb chops I had picked up for dinner. These corn pancakes were not only easy but,  delicious and a big hit with both my husband and myself! Another recipe I will be adding to my “go to” list!  Happy Friday everyone!!

  7. Hi Kathy, these look so great! Just a quick piece of advice, you should probably apply cold to your neck. Heat is applied when the injury is chronic or old. Take care, Ellen

  8. Hubby and I enjoyed these little pancakes and I will definitely be making them again. It's a great recipe to just whip
    up in a hurry when you don't know what to have as a side dish. Hope you are feeling better, have a great weekend, although I think we are going to be sweltering.

Kathy, your little round corn pancakes look wonderful and I must admit that your idea of pairing them with lamb chops is fantastic - I am sure that the chops and the pancakes go together so well. I am so glad that you and your husband liked them so much, we did too and they will certainly make a few repeat appearances at our dinner table.

  18. Kathy, I just love corn pancakes, and yours turned out so delicious! The great thing about corn pancakes; you can have them for breakfast, or for a great side-dish, such as you have there, a full and perfect S. Florida dish...now, could you pass that plate of deliciousness?

  23. The opinions seem divided this week, but I'm with you in the "liked them" camp. I know I'll make them again this summer (I used fresh corn and will again). I hope your neck is feeling better. Being uncomfortable when you are as active as you are is NOT FUN. Take care.

  25. Corn Pancakes! Being a lover of all things "cornbread" I can imagine how delicious these taste... What a fun story about how the french chef's mother made them all the time and now they are in his very fine french dining establishment!!

  29. Sounds like it was perfect timing for one of Dorie's easy recipes. I have to agree, this might be the easiest one yet. I'm so sorry to hear that you injured your neck (hope you heal up quickly) and I'm very impressed that you were able to whip up such a delicious looking meal despite being in pain.
