Saturday with Dorie...Potato Chip Tortilla

Well, as you can see by the title, I missed French Fridays this week. This has been a crazy month with all the Christmas preparation. My kitchen looked like someone had dropped the A bomb on it, due to all my baking. It was so bad, I couldn't find my glasses amongst the chaos. Yesterday I had no choice but to clean up the mess. I was hosting a Christmas party last night! I decided to make Dories Tortilla as an addition to my menu. The best part of this Tortilla was the ease of preparation. Because Dorie said it would make a great appetizer, I decided to serve it at my party. So yesterday afternoon I put this tortilla together...wonderfully easy! I still had scallions in my garden so I pulled out a bunch. I also used some of the fresh rosemary that's growing on my deck. I had everything ready to go and about 3pm I put it on the stove to cook. Dorie said it is best served at room temperature. Since my guests were arriving at about 7pm, I thought this would be a good time to get it done. It looked good but I needed to know weather or not to serve it to my guests. As you can see in the pictures...I swiped a little piece. I thought it was very good, although I think it could have used more seasonings. I went light on the salt because of the potato chips. The next time I make it I will add a little more spice... maybe more heat...to kick it up a notch. Other than that I thought it was delicious and more importantly my husband and my guests seemed to enjoy it!

    enjoyed them. Tricia and I both thought this was a great quick and
    easy recipe. Have a Merry Christmas a week early. I made next week's
    recipe early, cause I think I will be busy in the kitchen next week. Ha,

  8. I'm glad everyone enjoyed the tortilla. It looks beautiful! I really liked the taste of the fresh herbs in this. I am toying with the idea of making this again for Christmas Eve because it would be an unexpected addition to the menu. I really liked that you cut it up into squares for serving.   10. Yeah,the mountains of dishes is really the only downside to Christmas baking, isn't it? I was just scrubbing flour off my counter tops so I feel your pain! This tortilla looks like the perfect holiday appetizer and I'm sure your guest loved this and all of your delicious cooking!

  11. What an unusual appetizer, Kathy. I don't have Dori's book but my daughter Lora has it. Must check out some great recipes in there, including this yummy one as well! Looks delicious to me, with all the herbs, and crushed potato chips, mixed with beaten eggs?...can't go wrong!

    So funny how you sneaked a piece out of it for "taste testing" I would do the same too.
    As far as mess in the kitchen, there's always tons of dirty pots and pans when we're cooking or baking, that's why a lot of times Lora and I cook and bake together, so one of us can do dishes and take turns cleaning up!

  13. Love this tortilla cut in squares for an appetizer and served on your lovely holiday platter. I agree it was a bit bland even with the herbs, scallions, garlic and spices so I guess more salt? Anyway, it was definitely good and a great make ahead dish. I will make it again with some different ingredients.
